Advent Calendar 

Throughout December, we have an advent calendar, here and in the library, filled with inspiration and tips! Every weekday, a new window is opened.

Recipe for Saffron fudge

About 40 pieces

Ingredients 
50 g butter 
3 dl powdered sugar (3 dl equals approx. 270 g) 
3 dl whipping cream 
1 1/2 dl light syrup (1 1/2 dl equals approx. 210 g) 
1 tsp white wine vinegar 
2 packets saffron (1/2 g each) 
1–2 tsp flaked salt

How to do 
Mix all ingredients except saffron and flaked salt in a thick-bottomed saucepan measuring approx. 21 cm in diameter.  
Bring to a boil and let cook slowly for approx. 25–30 minutes. Stir often and don’t leave it unattended. 
Do a ball test – take a small amount of the batter and add into cold water. If it solidifies and can be 
rolled into a ball, it’s ready.  
Stir in the saffron. Pour the caramel mixture into a small baking paper-lined pan, about 15 x 20 cm (for 40 pieces). Sprinkle with flaked salt. Let cool at room temperature. 
Cut the caramel into pieces. Store at room temperature in an airtight jar with baking paper 
between each layer.

Reading and writing retreat

Do you have a lot of reading and writing to get done before you can enjoy the holiday break?

Join the last reading and writing retreat for this semester now on Thursday 11 December between 9.00-12.00.

The retreats are held in English, but you are welcome to read or write in whatever language you like. The retreats are arranged byt Academic Skills Services and LUSEM Library, and are open to all students at LUSEM.

Nobel Day

Today is the Nobel Day, when the Sveriges Riksbank Prize in Economic Sciences in Memory of Alfred Nobel will be awarded ”for having explained innovation-driven economic growth”. 

With one half to Joel Mokyr: ”for having identified the prerequisites for sustained growth through technological progress”. 

And the other half jointly to Philippe Aghion and Peter Howitt: ”for the theory of sustained growth through creative destruction”.

Make your own Glögg, the Swedish Christmas drink

Ingredients for 1 liter

6 cm fresh ginger

1 bottle of red wine (75 cl)

2 dl granulated sugar

2 cinnamon sticks

3 pieces of bitter orange peel

about 10 whole cloves

1 tsp whole cardamom seeds

How to do

Peel and slice the ginger into slices about 1/2 cm thick.

Mix the wine, ginger, sugar, vodka and spices in a saucepan. Heat gently while stirring to about 70°C.

Let the mulled wine stand and steep for at least 30 minutes before serving.

Serve the mulled wine with whole blanched sweet almonds and raisins
